zoo day!

One of the perks to my husband working at the zoo is that we get to go 'behind the scenes' of the zoo to meet animals of our liking. My sister and her boyfriend have made it an annual event in the summer to spend a day at the zoo with Greg, meeting new animals each time! This year Avery and I joined. We were privledged enough to meet Claude and Greenbean {pengiuns} and Sam and Johar {giraffes}!

We enjoyed petting, feeding and taking pictures. It was an incredibly fun day followed by a delicious meal at Roja.

oreo truffles


I made oreo truffles the other night for Greg to take down to a bachelor party/day at the lake. They are the perfect dessert to bring for a crowd because they are simple, quick to assemble, bite size {so you don't have to worry about bringing utensils to your gathering} and the balls/drizzle don't have to be perfect for them to still and look and taste delicious. The only downside would be the black teeth that come for eating oreos!

Here's the recipe:
1 package of oreos, finely crushed
1-8 oz package of cream cheese, softened
1 cup of baker's semi-sweet chocolate chips

Crush the oreos in a food processor. When crushed mix with softened cream cheese. Form balls together and drizzle with melted semi-sweet chocolate chips. Put in fridge to harden (about an hour).

Avery enjoyed her first taste at an oreo while I cooked. We don't keep many sweets around the house so this was a real treat. Afterwards, she wanted to make 'balls' out of her playdough!

the fourth 2013

I cannot believe I am so far behind on my posts!

For the fourth of July, the Haus fam spent a long weekend in Okoboji with my family. We had an amazing time! There is something about being by a lake that is so surreal and, in my opinion, a staple of summer time. Our weekend in Okoboji included LOTS of pool time with a cold drink in hand. My mom made a 'lake drink' concoction and later Kristin and Greg made a lemonade one. So yummy! We attended a BBQ and fireworks show on the shore of our hotel for the actual fourth of July. We also played many rounds of dominos, went on a glass bottom cruise of the lake, visited Arnold's Park and took many walks with Avery around the lake and hotel. So refreshing to get away even if it was for a short time. We all came back with lots of sun and good memories.


The Richter kids made a promise to each other that one day when we are makin' the big bucks we will all go in together in a lakehouse :)

Livin' on Summertime

It has taken me a couple of weeks, but here I am! We are livin' on summertime around here - which means lots of swimming, grilling, biking, gardening..basically anything outside. So far this summer has had beautiful weather and we are taking every opportunity we can to be outdoors. I love the feeling of not turning on the TV until Avery is in bed. I feel so much more productive. 

In other news - I am attempting to find a way to get a password on my blog. So those that follow me on facebook or know me personally would still be able to access the blog. Not sure how to do it yet. When I find the time to research, I will.
